BlackBerry Muffins

Have some left over blackberries or want to try and new and unique recipe, well this is the one. I was a bit skeptical while making this, thinking it wont turn out as I expected, but turned out better than I thought. We had some blackberries hidden in the back of the fridge and instead of throwing them away, decided to find something useful and tasty to make out of them. So lets get right to it!

Ingredients: 2 1/2 cups all purpose flour
1 tbsp baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 eggs
1 cup sour cream
1 teaspoon milk
1 cup (200 g) sugar
8 Tbsp warm melted butter (1 stick)
1 teaspoon vanilla
1 1/2 cups of blackberries

1. Preheat your oven to 400F. This recipe will make a batch of about 18 muffins or even more based on how much you put for each cup. 2. Combine all the dry ingredients together, the flour, baking powder, baking soda, cinnamon and salt in a bowl. DO NOT ADD THE SUGAR IN THIS MIX.

3. In another separate bowl add the eggs, sour cream, milk, sugar, butter and vanilla. 4. Combine them all together in one bowl. Don't over-mix, leave it light and well combined. If you mix too much, then the muffins won't be fluffy. :(

5. Next add the blackberries slowly into it, not mixing too much, but making sure its all combined evenly.
6. Next, divide it all evenly into the cups and let it back for 17-20 minutes. Mine took about 18 minutes and mine were pretty full.

7. After you check that they are completely baked, put them out on a cooling rack and enjoy after 2-3 minutes!
